PEACH CLAFOUTI

A French type of flan, this dish is warm and sat­is­fy­ing.

PREPARATION TIME: 5 MINS COOK­ING TIME: 15 MINS SERVES 2 (AS AN OCCASIONAL DESSERT)

Cook­ing spray

120g (1/2 cup) drained peach

slices in nat­u­ral juice

2 Tbsp ex­tra light sour cream 60ml (1/4 cup) light milk

11/2 Tbsp whole­meal

self-rais­ing flour

1 Tbsp caster sugar or

gran­u­lated sugar sub­sti­tute 60g egg

1/2 tsp vanilla ex­tract

Ic­ing sugar (op­tional), to dust

1 Pre­heat oven to 180°C (fan­forced). Spray 2 x 125ml shal­low oven­proof dishes with cook­ing spray. Evenly ar­range peach slices over base of the dishes.

2 Whisk sour cream, milk, flour, sugar, egg and vanilla in a jug and pour mix­ture over peach slices.

3 Bake for 15-18 min­utes or un­til the tops are light golden brown and set. Dust with ic­ing sugar, if you like, and serve warm.
