CHILLI-ROASTED SWEET POTATO, CAULIFLOWER, ROCKET AND RICOTTA
SERVES 4 (AS A LIGHT MEAL)
This salad shows how a dressing can transform simple ingredients into something really special.
1 sweet potato (about 250g),
cut into 3cm cubes
1 medium cauliflower (about
750g), broken into florets 2 teaspoons chilli flakes 5 thyme sprigs, leaves picked 2 tablespoons olive oil
Freshly ground black pepper 100g rocket
1 quantity Pomegranate,
Mint and Coriander Dressing (see recipe, opposite)
50g ricotta or feta
cheese, crumbled
1 Preheat the oven to 200°C. Line a large baking tray with foil.
2 Toss the sweet potato and cauliflower with the chilli flakes, thyme and olive oil. Spread in an even layer on the baking tray, season generously and roast for 20 minutes.
3 When cool, toss with the rocket and half of the dressing and finish with the crumbled ricotta or feta cheese.
4 Serve the remaining dressing for people to help themselves to
more if they wish.
