Dark choco­late your way

DARK CHOCO­LATE TRUF­FLES

For base recipe, in a medium saucepan, stir 350g chopped dark choco­late and 125g light cream cheese over low heat un­til melted (mix­ture will be slightly grainy). Re­move pan from heat. Stir in

1 tsp vanilla ex­tract. Trans­fer to a bowl. Cover with plas­tic wrap. Chill in fridge for 1-11/2 hours or un­til mix­ture is firm enough to roll. Shape into 28 small balls. Roll in de­sired coat­ings (see be­low). Store, cov­ered, in the fridge for up to 1 week. Makes 28. 1 per serve as an oc­ca­sional dessert. 1 Co­conut Roll in 1/2 cup shred­ded co­conut un­til coated.

2 Choco­late and sea salt Roll in 220g melted dark choco­late un­til coated. Sprin­kle with a tiny amount of sea salt. Leave to set. PER TRUF­FLE: 540kJ, pro­tein 2g, to­tal fat 9.9g (sat. fat 6g), carbs 9g, fi­bre 0g, sodium 173mg

3 Peanut but­ter Com­bine 85g melted white cook­ing choco­late with 1 Tbsp light peanut but­ter. Driz­zle onto truf­fles. Leave to set.
