HERBED COT­TAGE CHEESE AND SAL­MON ON RYE

Com­bine 130g (1/2 cup) low-fat cot­tage cheese, zest of 1/2 a small le­mon, 1 Tbsp finely chopped dill and freshly ground black pep­per in a small bowl. Spread cot­tage cheese over 2 slices Bür­gen rye bread (or gluten-free bread). Top with 1 cup wa­ter­cress and 50g sliced saltre­duced smoked sal­mon. Serves 1.
