HERBED COTTAGE CHEESE AND SALMON ON RYE

Combine 130g (1/2 cup) low-fat cottage cheese, zest of 1/2 a small lemon, 1 Tbsp finely chopped dill and freshly ground black pepper in a small bowl. Spread cottage cheese over 2 slices Bürgen rye bread (or gluten-free bread). Top with 1 cup watercress and 50g sliced saltreduce­d smoked salmon. Serves 1.
