CHICKEN AND BROCCOLI SALAD WITH BUTTERMILK DRESSING

PREP TIME: 15 MINS

(+ 2 HOURS CHILLING) SERVES 4 (AS A LIGHT MEAL)

250g classic coleslaw mix

(without dressing)

200g coarsely chopped cooked skinless chicken breast

75g (1/2 cup) dried

cranberrie­s

3 celery sticks, thinly sliced 1 small red onion,

finely chopped 80ml (1/3 cup) buttermilk

80ml (1/3 cup) 97% fat-free mayonnaise or gluten-free mayonnaise 1 Tbsp honey

1 Tbsp apple cider vinegar 1 tsp dry mustard powder Freshly ground black pepper 120g pkt baby spinach leaves

1 Put the coleslaw, chicken, cranberrie­s, celery and onion in a large bowl. Toss to combine.

2 Whisk the buttermilk, mayonnaise, honey, cider vinegar, mustard and pepper in a small bowl. Pour over salad and toss to coat. Cover and put in the fridge for at least 2 hours, or up to 24 hours to chill.

3 To serve, toss the baby spinach into the salad.
