ROASTED PEAR WITH CRUMBLE TOPPING
PREP TIME: 20 MINS COOK TIME: 25 MINS SERVES 4 (AS A DESSERT)
2 red pears, unpeeled,
halved lengthways
2 tsp light margarine, melted
¼ tsp vanilla essence
20g (¼ cup) rolled oats
2 Tbsp coarsely chopped pecans 1 Tbsp brown sugar or granulated
sugar substitute
Pinch ground cinnamon
4 small scoops Peters No Sugar
Added Creamy Vanilla ice-cream
1 Preheat oven to 180°C (fanforced). Line a large baking tray with baking paper. Use a teaspoon to remove core from each pear half. Brush the cut side of the pears with 1 tsp of the margarine. Place, cut-side down, on one side of the lined tray. Roast for 15 minutes.
2 Meanwhile, combine the remaining margarine, vanilla essence, oats, pecans, sugar and cinnamon in a small bowl.
3 Add oat mixture to other side of the tray and roast for a further 8-10 minutes, stirring the oats once, until the pears are tender and the oats are golden brown.
4 Place a pear half in each serving bowl. Sprinkle with crumble. Serve with ice-cream.
