PEAR CROSTINI WITH BLUE CHEESE SPREAD

SERVES 8 (3 PER SERVE AS A SNACK)
170g piece sourdough or glutenfree baguette, cut into 24 slices Cooking spray
3 Tbsp light spreadable
cream cheese
30g blue cheese, crumbled
3 Tbsp light sour cream
2 cloves garlic, crushed
1 pear, unpeeled, quartered, core
removed, thinly sliced
Balsamic glaze, to serve
Thyme leaves, to serve
1 Preheat oven to 180°C (fanforced). Arrange bread slices on a large baking tray and spray tops with cooking spray. Bake for 10 minutes or until golden brown. Transfer to wire racks to cool.
2 Meanwhile, mix the cream cheese, blue cheese, sour cream and garlic in a small bowl.
3 Spread cheese mixture over bread slices and top with pear slices. Drizzle with balsamic glaze and top with thyme leaves. Serve immediately.
