BLACK BEAN TOSTADAS

PREP TIME: 5 MINS

COOK TIME: 10 MINS

SERVES 2 (AS A LIGHT MEAL)

4 Mis­sion White Corn Tor­tillas 270g (1 cup) canned black beans,

rinsed and drained

4 Tbsp mild salsa or gluten

free salsa

½ tsp ground cu­min

1/2 small av­o­cado, mashed

un­til smooth

1 tsp fresh lemon juice

Freshly ground black pep­per 1 cup chopped ice­berg let­tuce 1 small tomato, chopped

1 green shal­lot, di­ag­o­nally sliced 1 Pre­heat oven to 200°C (fan-forced). Line a small tray with bak­ing pa­per. Spray the tor­tillas with cook­ing spray. Bake for 8-10 min­utes or un­til slightly crisp.

2 Mean­while, put the beans, salsa and cu­min in a small saucepan. Stir over low heat, mash­ing up slightly, un­til warmed through.

3 Di­vide bean mix­ture evenly be­tween the tor­tillas. Mix av­o­cado, lemon juice and pep­per in small bowl. Spoon over bean mix­ture. Top with let­tuce, tomato and shal­lot.
