ORANGE & BLUEBERRY BIRCHER
PREP TIME: 5 MINS (+ 20 MINS COOLING + OVERNIGHT CHILLING) SERVES 2 (AS A BREAKFAST)
75g (3/4 cup) rolled oats
2 Tbsp linseeds
Zest of half an orange, plus 2
oranges, peeled and chopped 300ml boiling water
180g (2/3 cup) natural yoghurt 125g punnet blueberries
1 Mix the oats, linseeds and orange zest in a medium heatproof bowl. Pour over the boiling water. Stir. Set aside for 20 minutes to cool slightly. Cover and put in the fridge overnight.
2 Stir in three-quarters of the yoghurt and divide between glasses or bowls. Top with the oranges, remaining yoghurt and blueberries. Serve.
