VEGIE CAESAR ROLL UPS

SERVES 1 (AS A LIGHT MEAL)

1⁄3 cup shredded red cabbage 1/4 red capsicum, cut into

short, thin strips

1 small carrot, cut into

short sticks

2 tsp Caesar salad dressing 1 Old El Paso Light Tortilla 1 Bega Stringers, halved

lengthways

2 wedges lemon, to serve

1 Combine cabbage, capsicum, carrot and salad dressing in a small bowl. Toss to combine. 2 Place the tortilla on a clean board. Arrange the cabbage mixture in a line across the middle of the tortilla. Place cheese on top of cabbage mixture. Roll up tortilla. Lay tortilla, seam-side down on the board. Cut into pieces. Squeeze lemon wedges over pieces and serve.
