Mix it up
Cauliflower rice is a great low-carb alternative to regular rice, pasta or potatoes and is quick and easy to make. Simply trim cauliflower and cut into small pieces. Place in a food processor (in batches) and process until it resembles rice or couscous. Steamed, microwaved, pan-fried or roasted, it’s delicious. You can then toss in chopped fresh herbs and lemon or citrus zest to add an extra flavour kick. If roasting, simply drizzle with a little olive oil and throw in a few spices as well.
If you are short for time, you can even pick up some pre-prepared and ready to go in the fruit and vegetable section of the supermarket. Cauliflower pizza bases are gaining popularity and are a great gluten-free alternative.
