CREAMED CORN & CHICKEN SOUP

Put 125g can creamed corn, 80ml (1⁄3 cup) water, 75g (½ cup) cooked and shredded skinless and boneless chicken in a small saucepan. Stir over medium heat until warm. Ladle soup into serving bowls and sprinkle over chives and freshly ground black pepper. Serves 2.

Spread 2 Ryvita Crispbread­s with 1 tbsp light cream cheese. Top with ½ small Lebanese cucumber, peeled into ribbons, ½ small sliced tomato and a small handful trimmed snow pea sprouts. Sprinkle with freshly ground black pepper. Serves 1.

BEAN & TOMATO SALAD

Combine 130g can rinsed and drained four bean mix, 6 chopped cherry tomatoes, ¼ cup alfalfa sprouts, ¼ cup roughly chopped coriander leaves, squeeze fresh lemon or lime juice and freshly ground black pepper in a small bowl. Serves 1.
