Steamed golden syrup pudding
PREP 10 MINS COOK 30 MINS SERVES 6 (AS A DESSERT)
80g (½ cup) wholemeal selfraising flour
40g (¼ cup) self-raising flour 2 tbsp brown sugar or granulated
sugar substitute
½ tsp mixed spice
30g light margarine, melted 140g tub unsweetened apple
puree
60g egg, lightly whisked 1½ tbsp golden syrup
1 tbsp diet vanilla yoghurt, per
person, to serve
1 Spray a 1L (4 cup) shallow ovenproof dish with cooking spray. Preheat oven to 160°C (fan-forced).
2 Combine the flours, sugar and mixed spice in a large bowl. Add the margarine, apple puree, egg and 1 tbsp golden syrup. Whisk until well combined. Spoon the mixture into the dish and smooth the surface.
3 Cover the top of the pudding with a piece of baking paper and foil. Place in a deep ovenproof dish. Pour enough boiling water into the dish to come halfway up the sides.
4 Cook the pudding for 30 minutes or until the pudding is cooked through when a skewer inserted into the centre comes out clean. Drizzle over the remaining golden syrup and serve with the yoghurt.
