FROM THE EDITOR

- Sarah Tuck, Editor

What a crazy time it’s been lately. Having

(so far) escaped the worst of COVID-19 here in New Zealand, it is shocking to see the devastating effects the virus is still having around so much of the world. Meanwhile, when it comes to politics both here and abroad, there is never a dull moment! Here at the dish offices we have never felt luckier to call New Zealand our home. As we head into the heart of winter, we’re certainly feeling like gathering friends and family for shared meals, laughter and even the odd road trip. To get the ball rolling, we’ve compiled a ‘nose-to-tail’ look at what events are happening around the country (page

28), followed by a fab feature on the art of butchery and the joys of unusual cuts, by writer Maria Hoyle.

When it comes to serving up a winter feast, we’ve got you covered with Claire’s epic roasts and braises (page 44), with an equally stunning collection of sides from page 60. (Seriously – those Jerusalem Artichokes with Crispy Sage and Roasted Hazelnuts are incredible… not to mention the beetroot!).

Although traditionally eaten in warmer climes, I’ve always been partial to a curry when the weather turns wild, so have shared some of my all-time favourites on page 74. I reckon they provide a great excuse to round up a few of your besties for an old-school dinner party; maybe even divide up the recipes for a full ‘pot luck’ menu.

Olivia Galletly has dished up a spectacular selection of desserts (page 84), with a Banana and Date Self-saucing Pudding that would soothe the coldest soul on the bitterest of nights. Our Food Fast section is back with a vengeance (page 96), providing speedy solutions for the dilemma of how to get dinner on the table in double-quick time.

Our Tasting Panel enjoys a dram or two as I join drinks editor Yvonne Lorkin and international spirits judge and whisky writer Tash Mcgill (The Whisky Girl) to sample stunning local product.

So, there we have it – winter on a plate

(and in a glass). Enjoy!
