Dish

FROM THE EDITOR

- Sarah Tuck, Editor

Is it too late to say happy new year? Quite possibly, so perhaps instead I’ll welcome you to 2021 with dish! The team have been back in the office since early January, working hard to get this beautiful first issue of the year ready for you. The weather has been so fabulous we have kept our eyes averted from the windows to escape temptation… but I know that with long weekends coming up, and the potential for a few extra days holiday here and there, we too will be nipping away from the big smoke to rest and relax.

If you haven’t yet seen-monique Fiso’s book Hiakai: Modern Maori Cuisine, I highly recommend you get your hands on a copy. In the meantime check out Maria Hoyle’s feature on Monique (page 26), where she talks about her journey of discovery around Māori kai that has culminated in the ongoing success of her Wellington restaurant and sell-out book.

Ever wondered what Sam Neill fancies for dinner? We did, so we interviewed both him and celebrated Kiwi actress Antonia Prebble about their food likes and dislikes, with the intent of creating a bespoke dish for each of them. Check out the interviews and results on page 30.

Then brace yourselves; we have 50 fabulous recipes waiting for you throughout the magazine, starting with Olivia Galletly’s Urban Cowboy selection on page 38. With recipes such as Spicy Cornflake Crumbed Chicken

Burgers, they’re perfect for the balmy summer evenings ahead. Feeling the heat? Chill out with Claire’s amazing icy dessert treats (page 54), then plan a gathering of good mates to share an array of stunning salads (page 64) – fresh, simple and packed with flavour! Make life just that little bit more pleasant if you’re eating at your desk by packing a cafe-quality lunch (page 78). And don’t forget our epic Food Fast section, full of inspired ideas for after-work feasts – including SIX brilliant one-pan chicken dishes we know will be on permanent rotation in households around the country for years to come.

Is there a more perfect summertime tipple than a classic gin and tonic? We think not, so we sent forth our intrepid drinks editor to find the best selection for your sipping pleasure. Head to Tasting Panel on page 111 to read more about this spectacular spirit and see who made the grade. Finally, if you’re hankering after a once-in-a-lifetime holiday for a special occasion, turn to page 117 to learn all about the idyllic Mahu Whenua in Wānaka – and then subscribe to be in to WIN an escape to this gorgeous location. (Existing subscribers are automatically entered).

We know how busy and complicated life can get, so the quiet moments are to be savoured and appreciated. As you take your first look through these pages I invite you to kick off your shoes, put your feet up, and relax. Take it easy.
