Distillery back for a double shot

- Steel Libby

According to UFO Hunters, there was a spooky sighting at Ceres on Monday of a “bright/ iridescent UFO travelling at high speed and low to the ground”. The truth is still out there though, because no photos have been released. IT has been open just six months, but the success of Bellarine distillery and cellar door The Whiskery has its owners eyeing an expansion.

After taking several years to transform the old Drysdale farm into The Whiskery, Russell Watson and Lorelle Warren are not wasting any time in taking the operation to a new level.

With the boutique venue now often at capacity, plans have been lodged to double the allowable patrons to 120.

“The use commenced operations this year with overwhelming success,” a planning permit reads.

“At present The Whiskery is operating at its capacity, and visitors will need to be turned away if permission cannot be obtained for the additional patrons.” Extended opening hours are also being sought. While it now has to close by 8.30pm, The Whiskery would operate until 11.30pm on Fridays and Saturdays if permitted.

The existing limited and casual food options — which are pizzas and cheese platters — are also set to be expanded.

Visiting food trucks would be brought on to the site occasionally, to provider greater variety and choice.

The venue would also be hired out for private functions, at a rate of once or twice a month.

The Whiskery is the cellar door space for Bellarine Distillery, which is behind the acclaimed Teddy & The Fox gin.
