Classical sake bar to dish up an authentic cultural experience

PLANS for a Japanese sake bar are taking shape in the Little Malop Street precinct.

7 Samurai Sake Bar is currently undergoing a fit-out behind a striking red door on ern barred bandicoot. Having graduated from Werribee Open Range Zoo’s Guardian Dog program, Barkly and Mackinnon are ready to get to work.

The next stage will see

McLarty Street, with the renovation expected to completed in late July.

An opening date is still to be confirmed, pending a liquor license approval.

The new venue is a project of Bryan Mu, the owner of the the pair join four fellow graduates at future bandicoot trial sites, bonding and living alongside a herd of sheep. Guardian Dog specialist­s David Williams and Lydia Whiteway teach the successful Shinya Ramen & Bar on Gheringhap Street.

Mr Mu told the Geelong Advertiser he hoped the authentic sake culture experience would draw in past travellers to Japan and tourists alike.

“The business partner we’re protective canines to help scare away potential predators like foxes and cats.

“Maremmas have been protecting livestock by barking and patrolling their herd for thousands of years,” Ms

Whiteway said. “The Maremmas know how bandicoots smell, move and what they look like. We’ve trained them to either stand still or move away any time they see a bandicoot.” working with is a sake sommelier in Melbourne who is a distributo­r throughout Australia. There’s a similar bar in Melbourne doing very well so we thought we’d try to bring the concept here,” he said.

“There’s a lot of local customers who would have lived in Japan or travelled in Japan and loved it.”

7 Samurai will also offer a Japanese whisky range and paired bar food, while the plan is for a bottle shop to operate at the premises.

The venue may not be the only new one coming soon, with a liquor license pending for a cocktail bar linked to an address on Lupton Street, Geelong West with an applicatio­n registered under the name Story Cocktails.
