Chicken Lasagne
with Cauliflower Sauce and Veggie Layers
Lasagne is another fabulous way to enjoy mince. Mince is such a great cut of meat for families because it is so versatile and inexpensive. This is a healthy twist on an old favourite.

1 onion, diced 2 cloves garlic, crushed 1 cm fresh ginger, crushed 1 tablespoon olive oil 500 grams chicken mince 1 zucchini, grated 400 gram can tomatoes 2 tablespoons tomato paste ½ teaspoon ground chilli powder Salt and pepper to taste
Cauliflower Sauce
½ head cauliflower ¼ cup chicken stock 1 tablespoon olive oil Salt and pepper to taste
Vegetable layers
1 medium eggplant 1 large zucchini 3 tomatoes
Preheat the oven to 180 degrees celsius.
Dice the onion and crush the ginger and garlic. Heat a pan over a medium heat with the olive oil in it. Sauté the onion, garlic and ginger for a few minutes. Add the chicken mince and brown for a few minutes. Add the grated zucchini, tomatoes, tomato paste, chilli powder and salt and pepper. Stir for a few minutes and combine all the ingredients, breaking down the tomato. Allow to simmer for 20 minutes with the lid on, stirring occasionally.
To make the cauliflower sauce cut the cauliflower into smaller pieces and steam or simmer in a saucepan over a medium heat for 15 minutes or until tender. Once tender, drain the water and place the cooked
cauliflower into a blender or food processor. Blitz until smooth, add the chicken stock, olive oil and salt and pepper to taste. Whiz for a further minute or until a very smooth consistency is achieved. Set aside the cauliflower sauce.
Slice the eggplant and tomato in rounds and the zucchini length-wise.
Once the chicken mince is cooked, spoon ⅓ of it into the bottom of a ovenproof dish. Place a layer of the sliced vegetables on top and then pour some of the cauliflower sauce on top of the vegetables. Repeat until all the ingredients are layered, finishing with the tomato on the top. Place in the oven for 20 minutes. Serve hot.
Tip Make this a vegetarian dish by replacing the chicken mince with six fresh tomatoes. Add layers of sweet potato and pumpkin too. Yum!
