A wine style that we don’t drink often enough with dinner is the classic barrel-aged blend of sauvignon blanc and sémillon; try it with this soup and I think you’ll agree it’s a great match. Then try a rich, supple tempranillo with the sausages. And finish with a cold glass of sweet botrytis riesling.
