Hong Kong’s Serge et le Phoque, the in­ven­tive French bistro from former Le Chateaubriand and Le Dauphin staffers, has ar­rived in Lon­don. The se­cond out­post is in the in­de­pen­dent Man­drake Ho­tel, a luxe 34-room prop­erty that opened last month in the West End. The menu fol­lows a sim­i­lar spirit to Hong Kong: oc­to­pus with cen­tury egg and gin­ger, say, or scal­lop with an­chovy, fried leek root, dried shi­itake and matcha tea. The wine, over­seen by som­me­lier Al­bert Blaize (for­merly of The Clove Club), leans to the or­ganic, bio­dy­namic and nat­u­ral.

The Serge team will also look af­ter the snacks in the ho­tel mini­bar.
