HAIGH’S

Dark-chocolate Bilby Haigh’s swapped bunnies for bilbies nearly 30 years ago, with part of the proceeds going towards protecting the marsupial’s dwindling habitat. This ethically and sustainably sourced bilby comprises 70 per cent cocoa solids, making it not too sweet and just the right amount of bitter. Although solid in its shape, the chocolate remains soft and velvet-like. It’s an all-round crowd-pleaser and a flawless Australian classic. $14.95 for 110gm. haighschocolates.com.au

KOKO BLACK

The Golden Egg with Orange and Pistachio Melbourne-based confectionery company Koko Black is renowned for its decadent “adult” creations, made using top-quality Australian ingredients and Belgian couverture chocolate. This caramelised white-chocolate egg has a lovely textural component with the addition of crushed pistachio nuts, while tangy diced orange peel balances out the sweetness. It’s a winner for those looking for a luxurious Easter gift. $22 for 180gm. kokoblack.com

CACAO

Salted Caramel Truffles Cacao’s quirky “sunnyside-up” truffles may look like child’s play, but they have a rich, buttery flavour reminiscent of old-fashioned English toffee. Milk-chocolate morsels, made from wholeroasted cocoa beans, are filled with a glossy saltedcaramel; they’re creamy, dense and dangerously moreish. Lucky they come in packs of 10, one just isn’t enough. $23 for 10. cacao.com.au

XOCOLATL

Milk Chocolate with Coconut and Almond When it comes to the art of making chocolate, the Partsioglou family are as talented as they are passionate. This milkchocolate egg is part of their Easter collection, and is textural with just the right amount of sweetness. Crack it in half and you’ll find generous chunks of roasted almond complemented by flecks of fragrant coconut. $15.95 for $160gm. xocolatl.com.au

JUST BLISS

Dark-chocolate Egg with Freeze-dried Strawberries This delicately crafted egg is accentuated with colourful splatters of cocoa butter, which bare resemblance to the work of Jackson Pollock. Here, dark chocolate is tempered, hand-poured into its mould and punctuated with freezedried strawberries, bringing a fruity-yet-tart crunch to this elegant Easter treat.

It’s gluten-free and dairyfree, too. $15.50 for 150gm. justbliss.com.au
