WINEMAKER Simon Gilbert What do you love about aged wine?

Riesling is a grape variety close to our family heritage and has always been one of my favourite whites to cellar. It’s fascinating how after several years of cellaring a wellcrafted riesling, you’re able to experience an evolved, mature wine. It will tell you a story of the region and producer it has come from, better than any other, while displaying a golden colour, secondary aromas, with more complex flavours.
