There is a wealth of spices in the powerful dark fruits of the bouquet and palate alike, yet the wine remains light on its feet. If you are a pinot devotee, don’t expect to be satisfied by one glass. The complexity of its characters and the ways in which they become more integrated over time. In pinot noir, the fragrance of primary fruit characters such cherry and wild strawberries is increasingly complemented by honey, truffle and cedar, while the palate grows richer and becomes softer with time. Natural acidity forms a backbone for ageing that imbues freshness and ensures that the individual identity of the wine is retained.
