From estate-grown, low-yielding 25yo vines at Keyneton, named after ancestor Heinrich Fiebiger who became a justice of the peace in 1890. Destemmed, open-fermented, matured for 18 months in predominantly French hogsheads (30% new). A well-made Eden Valley cabernet, with cassis and dried bay leaf lead the flavours, firm but fine tannins give texture and structure, the new oak well integrated. 14.5% alc

When it comes to aged red wines, cabernet sauvignon is our favourite. It becomes so much more approachable with age as the tannins soften and those beautiful briary fruit flavours shine. We love the challenge of finding a wine’s perfect moment. It is the change that comes in a 10 to 15-year-old cabernet sauvignon that blows you away and has been some of our best cellaring experiences.
