50% shiraz from the Barossa Valley, 50% cabernet from the Eden Valley, matured for 12 months in 80% French (including a 2500l foudre) and 20% American oak, 40% of the oak new. Complex vinificati­on of some very good fruit has produced an ultra-smooth and perfectly balanced medium-bodied blend, with black fruits dominant, but leaving space for splashes of red and purple fruit flavours. WINEMAKER Trent Burge What do you love about aged wine?

I love that it becomes a real testament to the particular vintage; seeing how well it can age overtime. Wine lovers are timepoor, so it’s good to see the patience and evolution that can present when people decide to cellar. I personally love the leathery characters that age brings out on a good shiraz. The wine really softens and you get a chance to taste it when the oak and fruit comes into perfect harmony.
