Estate-grown, hand-picked, crushed straight to French barriques (15% new) for fermentati­on with cultured yeast and 8 months maturation. The use of ‘sauvignon’ (dropping ‘blanc’) is European (particular­ly French, more particular­ly the Loire Valley). The barrel fermentati­on and maturation reflects Robin Brockett’s experience on the Bellarine Peninsula, and the quality of the vineyard’s terroir. 12.8% alc.

WINES MANAGER Steven Paul How do you describe this style of sauvignon blanc?

With sauvignon blanc we are seeking texture, balance, restrained fruit and a long length of palate. This is achieved through barrel fermentati­on and the use of older oak to mature the wine. This style tends to have the ability to age, and match a broader range of foods.
