Cold-harvested and crushed, 80% fermented in stainless steel, 20% in new French oak, the oak portion then blended back, matured on lees for 5 months. This is a sauvignon blanc that makes you reach for the bottle to pour yourself another glass (or so). It is intense and racy, but relies on fruit, not just acidity to provide its energy. Each taste reveals more, with white fruits, sugar snap peas and lemon. 12.5% alc.

Passel Estate’s inaugural sauvignon blanc is the reward of a long, cool vintage in Margaret River. Produced from fruit from a single vineyard, 20 per cent is fermented in new French oak for texture, with the balance cool-fermented in stainless steel to retain the verve and purity of expression. This elegantly structured wine is perfect for all seasons.
