Part wild-fermented with cloudy juice in 1yo barriques, part fermented in tank, this used to top the barriques monthly, 10 months on lees with monthly batonnage. A pretty nice wine from 25yo vines. It has a one-track citrus mind, lemon and grapefruit the protagonists. 12.1% alc. Barrel fermented, this fresh minerally sauvignon blanc is one for all seasons. It can be enjoyed on its own or with a range of foods, from decadent shellfish to paella or a hearty cassoulet. Limited production.
