Whole-bunch pressed, fermented in French oak (50% new), matured for 8 months. This is a pretty nifty example of the breed. Varietal character flirts with a ‘too fine’ criticism, but ultimately doesn’t have a case to answer. Oak might have been on the plus side, but it too answers the challenge. You are left with a wine of finesse, length and balance; chardonnay in a secure place with stone fruit and citrus both on the money. 12.5% alc.

It was lovingly created to be rich, full and generous with exciting cellaring potential – if you are strong enough to resist it now! Why should reds take up all the space in the cellar when exquisite examples of chardonnay like this develop so beautifully? The treatment of 50 per cent new and 50 per cent two- to threeyear-old French oak adds another dimension of complexity and class. Unity is dedicated to our friend Erik de Haart, a survivor of the 2002 Bali Bombings and advocate for sufferers of PTSD and depression.
