Part whole-bunch, part whole-berry wild fermentation, partial mlf and maturation for 10 months in new and used French oak all point to attention to detail, and to a total production of 85 dozen. As smooth as silk. 12.5% alc. Named after the estate owner, Owen Inglis, the brief to our winemaker was to create a tiny production chardonnay in a white Burgundy style. Preserving a tight line of chalky minerality and oyster-shell saltiness, this estate-grown chardonnay is layered, complex and perplexing. Only 600 bottles produced of this unique expression of Adelaide Hills’ chardonnay.
