Melbourne’s Collingwood has a new meeting place with Congress, now serving its own “simple” take on refined, seasonal dining within a warm and welcoming space. Katie McCormack of Milieu Hospitality says the food is honest in its simplicity, with an emphasis on provenance and quality rather than reinventing the wheel. The team has compiled a concise list of exciting wines, with a focus on lo-fi producers, mixing familiar local names with international varieties and vineyards.
