As Tim Bailly puts it, wine is in his blood. Growing up in France, his father had an undergroun­d cellar of about 3000 bottles and loved sharing this passion with his son. Today, with Tim settled in Sydney, his dad sends him three bottles of wine every few months. “He ships me a box, and we Skype and drink a glass together,” Tim says. “It links us back together.” Tim lives in a small place, so he quickly realised a wine cabinet was his best storage option. “I have a space issue, so my cellar holds up to 120 bottles, with 100 that are for ageing and about 20 of my day-to-day wines.” With the former pro skater now working in logistics, it’s no surprise to learn he has systems in place. “The top level of my Vintec is for my best wines, including Premier Cru and Grand Cru Burgundy that needs to age,” he says. Tim also places labels on each of his bottles showing their details at a glance, and they are colour-coded too. “My girlfriend knows she can’t take any of the red or gold ones!” Tim laughs. Despite his steady supply of Burgundy, Rhone and other French wines, thanks to his dad, Tim has developed a taste for a range of Australian producers, including Torbreck, Yarra Yering and Clonakilla. He has also been introduced to other greats through the Vintec Club, which is open to anyone who owns a Vintec or Transtherm wine cellar. “I really appreciate meeting other people who are passionate about wine,” Tim says. “We catch up in restaurant­s and dine on great wine-paired food, and get to extend our horizons and discover new things.”
