Win­ter din­ing should be all about com­fort and flavour. En­ter Anjum Anand's spice-packed recipes courtesy of her lat­est book, I Love In­dia. While re­cently in Aus­tralia, the UK au­thor shared her pas­sion for In­dian cui­sine.

Recre­ate these spice-packed In­dian recipes for a meal that packs a punch.

With eight cook­books and sev­eral TV se­ries un­der her belt, Anjum Anand has been cham­pi­oning In­dian food and mak­ing it ap­proach­able for more than 15 years. Still as pas­sion­ate as ever about In­dian cui­sine, Anjum doesn’t hes­i­tate when asked what keeps her ex­cited. “It just has so many lay­ers,” she says. “And In­dia’s food cul­ture is so vast, you can al­ways try some­thing new.” Based in the UK, Anjum fre­quently vis­its In­dia, par­tic­u­larly for her food line, The Spice Tailor, for in­spi­ra­tion and to gather new ideas. The prod­uct range al­lows the home cook to recre­ate a raft of tra­di­tional dishes, from street-food favourites to cur­ries. “If you can cook a curry, you can cook any­thing,” Anjum says.

As for the best drinks to pair with In­dian food, Anjum takes a re­laxed ap­proach. With a pref­er­ence for drinks that re­fresh the palate to off­set the spices, Anjum says sparkling wine can of­ten pro­vide a good match. But she doesn’t like to get too pre­scrip­tive about it. “I just like to choose a wine I re­ally like,” she says sim­ply.
