Winter dining should be all about comfort and flavour. Enter Anjum Anand's spice-packed recipes courtesy of her latest book, I Love India. While recently in Australia, the UK author shared her passion for Indian cuisine.

Recreate these spice-packed Indian recipes for a meal that packs a punch.

With eight cookbooks and several TV series under her belt, Anjum Anand has been championin­g Indian food and making it approachab­le for more than 15 years. Still as passionate as ever about Indian cuisine, Anjum doesn’t hesitate when asked what keeps her excited. “It just has so many layers,” she says. “And India’s food culture is so vast, you can always try something new.” Based in the UK, Anjum frequently visits India, particular­ly for her food line, The Spice Tailor, for inspiratio­n and to gather new ideas. The product range allows the home cook to recreate a raft of traditiona­l dishes, from street-food favourites to curries. “If you can cook a curry, you can cook anything,” Anjum says.

As for the best drinks to pair with Indian food, Anjum takes a relaxed approach. With a preference for drinks that refresh the palate to offset the spices, Anjum says sparkling wine can often provide a good match. But she doesn’t like to get too prescripti­ve about it. “I just like to choose a wine I really like,” she says simply.
