50/50% chardonnay and sauvignon blanc, hand-picked, fermented on skins for 7 days, whole-bunch pressed, 3 months on lees. There’s been no attempt to carbon-fine the wine or otherwise apologise for its light brassy gold colour ex fermentation on skins. The decision to press the skins while the fermentation was still protecting against oxidation or other issues makes perfect sense, the wine ending up with great texture and fresh flavours. 12% alc.
