Coaxing Clare Valley cabernet to behave well in public isn’t easy, but was achieved here. Destemmed, 5 days cold soak, fermented with specialist cabernet yeast, extended skin contact before pressing to French oak (40% new), matured for 18 months. The oak, in particular, has tamed the fruit, the choice of yeast likewise important.
