2016 Rosenthal Collector Mount Barker Cabernet Sauvignon

Destemmed and crushed, 12 days cold soak, open-fermented, 21 days post-ferment maceration, matured in French oak (50% new) for 17 months. Deep crimsonpurple; thanks to (rather than in spite of) the modest alcohol, this is uncompromisingly full-bodied. Tannins make themselves evident from the word go, but don’t grow and cause gridlock – they’re just there. They set the scene for deep-seated blackcurrant fruit framed by quality French oak on the long palate.
