What’s your best advice for pairing wine with food?
For me, it’s about so much more than what’s on the plate and in the glass. The stories behind the wines are a huge consideration for me when I’m putting a pairing together. And I tend to think a lot about structure rather than flavours. I also ask myself what I would want to drink to take another bite of the food, and what I would want to eat to take another sip of the wine.
