Beau­ti­fully bal­anced with re­gional and va­ri­etal in­tegrity, it has aro­mas of dark fruits and bay leaf, sup­ported by spice and cedar. Ex­pect con­cen­trated tan­nins with mul­berry, olive, savoury notes and toasted oak in­flu­ence.

What do you strive for in your style of caber­net?

The St Hugo is about achiev­ing a bal­ance be­tween power and el­e­gance, where fruit rich­ness is ex­pressed, but with a re­strained hand. It’s per­fectly blended to cre­ate a seam­less, deep, com­plex wine with silky tan­nins and ex­cel­lent cel­lar­ing po­ten­tial.

What are your favourite dishes for this wine?

Slow-roasted meat on the bone, such as osso bucco or lamb shanks. A pro­tein in the bone mar­row melds par­tic­u­larly well with the herbal char­ac­ters in a Coon­awarra caber­net sau­vi­gnon.
