2015 St. Hugo Coonawarra Cabernet Sauvignon
Winemaker: Dan Swincer
Beautifully balanced with regional and varietal integrity, it has aromas of dark fruits and bay leaf, supported by spice and cedar. Expect concentrated tannins with mulberry, olive, savoury notes and toasted oak influence.
What do you strive for in your style of cabernet?
The St Hugo is about achieving a balance between power and elegance, where fruit richness is expressed, but with a restrained hand. It’s perfectly blended to create a seamless, deep, complex wine with silky tannins and excellent cellaring potential.
What are your favourite dishes for this wine?
Slow-roasted meat on the bone, such as osso bucco or lamb shanks. A protein in the bone marrow melds particularly well with the herbal characters in a Coonawarra cabernet sauvignon.
