How do you approach the winemaking
for this cabernet? The cabernet is sourced from 28 hectares of Estate plantings, the oldest dating back to 1949. Fermentation takes place in 155-year-old vats, followed by maturation in French oak. The wines have consistently shown richness and are considered by many experts to be the best Estate red for long-term cellaring.
How is this wine best served?
It pairs wonderfully with lamb dishes – try it with spiced yoghurt lamb cutlets, slow-cooked harissa lamb shoulder with spicy chickpeas, lemon and oregano braised lamb shanks or roasted rosemary and garlic lamb shoulder.
