Winemaker: Alister Purbrick

-

Velvety smooth with delicious plum fruits, distinctive eucalypt notes and liquorice undertones are framed by classy French oak characters and fine tannins. A wine true to its heritage.

How do you approach the winemaking

for this cabernet? The cabernet is sourced from 28 hectares of Estate plantings, the oldest dating back to 1949. Fermentation takes place in 155-year-old vats, followed by maturation in French oak. The wines have consistently shown richness and are considered by many experts to be the best Estate red for long-term cellaring.

How is this wine best served?

It pairs wonderfully with lamb dishes – try it with spiced yoghurt lamb cutlets, slow-cooked harissa lamb shoulder with spicy chickpeas, lemon and oregano braised lamb shanks or roasted rosemary and garlic lamb shoulder.
