Hand-picked, the components vinified separately, variously matured in French or American oak. Dense crimson-purple; plenty of core fruit, but also powder puff/chocolate aromas and flavours. Clever work in the winery. 15% alc. 2018 Paulmara Estates APOTIGI Barossa Valley Cabernet Sauvignon Estate-grown 30+yo vines, destemmed to static fermenters, matured for 20 months in French hogsheads (70% new). Full-bodied and intense, yet supple and elegant. The tannins are polished, and the oak swims in the wake of blackberry, dark cherry and dark plum. The magic is the way the wine manages to convey its message with such ease. 14% alc.
