Is POP bet­ter when us­ing two or more

email clients?

No, it would be worse. POP de­liv­ery ser­vices au­to­mat­i­cally delete mes­sages from the server once de­liv­ered to a client. So, a mes­sage down­loaded onto your

iPhone would be re­moved from the server, and your Mac wouldn’t see it at all. Some email ser­vices pro­vide an op­tion to keep mes­sages on the server, though.

Would run­ning my

own server deal with these is­sues?

Not re­ally, as the server would still have to run the stan­dard IMAP pro­to­col. OS X Server is in­ex­pen­sive, but it’s not triv­ial to set up as a mail server, on top of which you would have to keep your Mac run­ning and con­nected to the in­ter­net at all times for it to work.

Email is one of OS X Server’s more com­plex fea­tures.
