How do I run an app when my Mac starts up?

Keep it open when you shut down and macOS will reopen it at startup, provided the option in the shutdown dialog is check marked. A more reliably persistent method is to go to System Prefs’ Users & Groups pane, select your account, click the padlock and authenticate, click Login Items, click the + button and click the app.
