Should I erase my SSD in case–sensitive APFS?

Not unless you have a particularly good and specific reason. iOS devices use the case–sensitive form, but some Mac apps simply can’t cope with it, and it could cause nasty issues later on. Case– insensitive is best, with or without encryption as you wish.
