Celebratio­n of whisky revolution

THE first licensed distillery in Tasmania since 1839 is celebratin­g 25 years.

Hobart’s Lark Distillery is releasing its Revolution Release of 25 bottles of whisky from 25 barrels, named to honour the “whisky revolution” founder Bill Lark started in 1992. Since then, distilleri­es have sprung up around Tasmania, with 17 on the Tasmanian Whisky Trail.

According to the Tasmanian Whisky Trail, it was illegal to distil whisky in Tasmania from 1938 until 1991, but now the state is home to almost half of Australia’s distilleri­es.

Mr Lark, who was recently appointed to the company’s board, has returned to the stills to help create a special barrel of whisky that will be released in five years.

Lark’s Revolution Series, distilled by Lark’s head distiller Chris Thomson, will be released over 25 days from May 1.
