Pizza pair fired up for opening night

IN a former apple canning factory, just south of the port town of Cygnet, sits a foodie’s heaven likely to draw punters from far and wide.

The Port Cygnet Cannery Kitchen and Bar is opening today after four years in the making.

It is a restaurant, cafe and beer garden, created by a chef well-versed with a wood fire and a pastry chef from Germany — Asher Gilding and Franca Zingler.

After running a catering company, marrying and finally renting the Cannery from Mr Gilding’s father and stepmum, the couple four years ago decided to create a space that married their respective talents.

“At some point someone dropped the words ‘pizza oven’ and now we’ve got this massive restaurant,” Ms Zingler said.

The Cannery will be serving “simple, yet considered food” from this evening.

At the centre of the restaurant is a wood fired pizza oven from Naples, Italy.

“We call it Dante the Inferno,” Ms Zingler said.

Pizza cooked in the oven is the main item on the menu, but small plates, snacks, desserts and drinks will also be served.

Ms Zingler said she was excited for “Cinnamon Sundays”, each week from 8am.

“I make European baked goods, very much Scandinavi­an inspired and things from Germany as well,” she said.

“I’m trying to have Sundays very different to other kinds of cafes.”

The restaurant will also be open for lunch on Sundays.
