Kimchi is a traditional Korean side dish made of fermented vegetables with added seasonings, such as salt, chilli and garlic. There are many varieties of kimchi – the most common is made with Chinese cabbage. It’s available in jars from the international aisle of major supermarkets, or fresh in the refrigerator section of your local Asian food store.
