Sticky Barbecue Pork Ribs

Serves 4 to 6, Prep and Cook: 2 hours, 40 mins

2 1/2 kg American-style pork ribs Baby rocket leaves, to serve

STICKY SAUCE 1/2 cup smoky barbecue sauce 1/2 cup tomato sauce 2 tblsps brown sugar 2 tblsps soy sauce 2 tblsps Dijon mustard 2 cloves garlic, crushed

1 To make sauce, combine all ingredient­s in a large jug with 1½cups water. Mix well. 2 Cut ribs into pieces, about five bones in each. Place ribs in a large, non-stick roasting pan. Pour over sauce. Season with salt and pepper. Turn to coat. Cover pan tightly with oiled foil. 3 Cook in a moderately slow oven (160C) for 1 hour, 30 minutes, or until pork is tender. Remove pan from oven and discard foil. Increase oven temperatur­e to hot (200C). 4 Spoon sauce in roasting pan over ribs. Return to oven. 5 Cook for a further 50 minutes, basting ribs twice during cooking, or until ribs are sticky and sauce is thickened. Remove from oven. Glaze ribs by spooning sauce over the top. 6 Serve with rocket.

200g streaky bacon, sliced

crossways into 1cm strips 3 eggs 2 baby cos lettuce, sliced 2 Lebanese cucumbers, quartered

lengthways, sliced 250g punnet cherry tomatoes,

halved 2 cobs corn, kernels removed

BLUE CHEESE DRESSING 100g Gorgonzola Dolce,

chopped ¼ cup olive oil 2 tblsps white vinegar 1 small clove garlic, crushed 2 tblsps thinly sliced chives

1 To make blue cheese dressing, blend cheese, oil, vinegar, garlic and 2 tblsps water in a blender until smooth. Transfer to a jug. Stir in chives. Season with salt and pepper. 2 Heat an oiled, frying pan over a medium to high heat. Add bacon. Cook, stirring occasional­ly, for about 4 minutes, or until crisp. Drain on absorbent kitchen paper. 3 Place eggs in a small saucepan. Cover with cold water. Bring to boil. Gently boil for about 3 to 4 minutes for a soft-boiled eggs, or until cooked to your liking. Drain. Return to pan. Cover with cold water. Stand for a few minutes. Drain. Remove shells from eggs. Cut in half lengthways. 4 To serve, place lettuce on a large serving dish. Arrange bacon, cucumbers, tomatoes and corn in rows over lettuce. Top with eggs. Spoon over dressing.
