Quick Cauliflowe­r and Chickpea Pilaf

Serves 4, Prep and Cook: 28 mins

¼ cup currants

Fresh mint leaves, to garnish

MINTY YOGHURT

1 cup Greek yoghurt

¼ cup finely chopped fresh mint

1 Place cauliflowe­r in a large bowl. Add combined curry powder and 2 tblsps of the oil. Toss well to coat. Transfer to an oven tray lined with baking paper.

2 Cook in a very hot oven (220C) for about 15 minutes, or until tender.

3 Meanwhile, heat rice according to packet directions.

4 Heat remaining oil in a large, deep frying pan over a medium heat. Add onion. Cook, stirring occasional­ly, until soft. Add rice, chickpeas, frozen vegetables and cauliflowe­r. Cook, stirring
