Quick Cauliflower and Chickpea Pilaf

¼ cup currants
Fresh mint leaves, to garnish
MINTY YOGHURT
1 cup Greek yoghurt
¼ cup finely chopped fresh mint
1 Place cauliflower in a large bowl. Add combined curry powder and 2 tblsps of the oil. Toss well to coat. Transfer to an oven tray lined with baking paper.
2 Cook in a very hot oven (220C) for about 15 minutes, or until tender.
3 Meanwhile, heat rice according to packet directions.
