Passionfruit, Lemon and Coconut Slice
Serves 18, Prep and Cook: 30 mins
½ x 400g packet digestive
biscuits
1 cup desiccated coconut
2 tsps finely grated lemon rind ½ cup sweetened condensed
milk
100g unsalted butter, chopped Passionfruit pulp, to serve
ICING
2 cups icing sugar mixture 25g unsalted butter, at room
temperature
2 tblsps passionfruit pulp 1 tblsp lemon juice
1 Grease an 18cm x 28cm rectangular slice pan. Line base and sides with baking paper, extending paper 2cm above pan edges.
2 Process biscuits in a food processor until finely crushed.
Transfer to a large bowl. Stir in coconut and rind.
3 Combine condensed milk and butter in a medium saucepan. Cook, stirring constantly, over a medium heat, for about 5 minutes. Immediately add to biscuit mixture. Stir until combined. Press mixture over base of prepared pan. Smooth over top. Refrigerate until firm.
4 To make icing, place all ingredients in a medium bowl. Stir until combined.
5 Spread icing over top of slice. Refrigerate until firm. Serve slice cut into squares. Drizzle with passionfruit pulp.
