What’s the difference between a polariser and the Landscape Picture Control?

Chris says… Picture Controls adjust things like sharpening and contrast. (See page 56 for more details.) The Landscape preset, among other things, reduces contrast so there is less risk of burnt-out skies. A polariser reduces polarised light in a scene, and can intensify the blue of a sky. The effect is hard to recreate in processing, so should be used at the time of shooting.
